I've noticed a large spike in my bill at the beginning of a new month, and the charges are associated with EC2 Reserved Instances. Why?

If you have an active Reserved Instance, you're billed for the entire month's usage at the beginning of each month.

This means that you can see a large spike in your bill at the beginning of each month, but the instance-hours covered by the RI appear as zero-dollar line items in the Billing and Cost Management console.
