We did this for a healthcare platform: separate EKS clusters for dev, prod and shared services, Jenkins CI/CD with zero downtime deploys and rollback, Prometheus, Grafana and ELK for monitoring, and AWS Config, GuardDuty, CloudTrail and Security Hub wired to Slack alerts, all aligned with HIPAA and SOC 2.
