You can launch as many instances from as many different AMIs as you need.

Usage instructions
Once the instance is running, RDP into the server using the credentials provided by AWS and connect to the administrator portal by typing http://<public_dns>/ui/admin/index.html. The default user name is 'admin' and the password is the Instance ID of your running EC2 instance. Create user accounts, setup Team Folders and customize the site branding to get started.
